Oenologist graduated (Bordeaux 2008), Ingénieur Alimentaire (ENITA Nantes 2006).
Originally from Bordeaux, Mathieu made his first vinification at the winery of Sauveterre de Guyenne and then abroad, in New Zealand.
After six years in production on different terroirs of Pomerol, he joined the Oenoconseil team in 2015 on the laboratories of Saint-Emilion and Beyhac-et-Caillau.
